もっとも adds a correction or qualification to what was said before.

It is common in written or somewhat formal explanation.

この方法は効果的です。もっとも、時間はかなりかかります。

This method is effective. However, it takes quite a lot of time.

Do not confuse it with 最も meaning “most.”

After a statement, add a limiting note.
